Anki has a BS from Umeå University in Sweden and a MS in Nutrition Communications from Boston University. Her interests include how our food is grown, how farming impacts the land, and how climate change impacts migration and food equity.
After moving to the U.S. from Sweden, Anki worked with food companies as a nutrition communicator. In California, she worked in a clinical setting at Kaiser Permanente, Richmond. She left nutrition to build CareCounsel with her husband, the country’s first health advocacy company, helping consumers navigate the complex world of healthcare. CareCounsel is now part of Stanford Health Care.
She has served eight years as Committee Member and Co-chair of the San Francisco Botanical Garden Society Gala Events, held board and committee positions at the Marin Garden Club, is active in Marin Master Gardener, and is a former Board member of the Swedish Women’s Educational Association, and has been involved on parent boards and committees during her children’s schooling at Marin Country Day School, Phillips Academy and Cate School.
Her primary avocation today is painting; her works have been shown in numerous Bay Area exhibits.
